Located in the Charles Village Neighborhood of Baltimore, Busy Beaver Bakery brings authentic French and European croissants and pastries, as well as high hydration Sourdoughs to the Baltimore community.

Busy Beaver Bakery is proud to use the finest flours and ingredients for our baked goods, which are made by hand, completely from scratch every Saturday.

We use freshly milled, organic, stone-ground, non-GMO flours from Janie’s mill for all of our breads and pastries, as well as Kerrygold Butter and the finest pantry items for all of our flavorings. On special occasions, we even offer foraged ramps and wine-berry offerings when they are in season.

Our baker, Daria Souvorova is a transplant from Belarus and is married to a French mathematician.

They both missed the delicious breads, pastries, and laminated doughs from their homelands, so Daria has been working for a decade to learn how to replicate the traditional recipes. She started sharing her pastries with her Charles Village neighbors during the pandemic, and this little bakery was born out of that community.
